This year we had a surplus of honey early in the season, harvesting just after the sakura, (cherry blossoms) bloomed. Our rooftop apiary is surrounded by a grove of sakura at the Japanese Canadian Cultural Centre which distinctly adds to the floral notes of our honey.
Our honey is Raw and Unpasteurized, meaning it has never been heated — preserving its natural aroma, flavour, and antioxidants.
We also practice Minimal Filtration, leaving behind traces of beeswax, propolis, and pollen. These natural elements amplify the floral notes and health benefits of our honey. Over time, you may notice crystallization — a completely natural sign of pure honey.
