This year’s harvest comes from our urban rooftop apiary in Toronto, nestled atop the Japanese Canadian Cultural Centre. Surrounded by a variety of Summer blossoms, the bees have created a honey with a delicate floral character that reflects the season’s bloom.
Our honey is Raw and Unpasteurized, meaning it has never been heated — preserving its natural aroma, flavour, and antioxidants.
We also practice Minimal Filtration, leaving behind traces of beeswax, propolis, and pollen. These natural elements amplify the floral notes and health benefits of our honey. Over time, you may notice crystallization — a completely natural sign of pure honey.
